- Heat a large griddle pan and set on high heat. Cut the peppers in half so that you can fill them and remove the seeds.
- Brush peppers from both sides with olive oil, place cut side down into griddle pan and cook for about 4-6 minutes until they start to slightly soften.
- Turn over and add the sliced cheese into each half.
- Cook until the cheese has melted, make sure that the pepper is softened but not burned to much . The skin will char.
- Whilst the are cooking make your white pesto by adding all pesto ingredients into a blender. Blend until they are a rough paste.
- When the cheese is melted put your pan under a grill or broiler for a few minutes to brown of the cheese . Do not put the handle underneath.
- Arrange your peppers , two per person on a plate, add the pesto and drizzle with the pomegranate syrup or balsamic vinegar , serve with bread.
